Festive Summer Strawberry Cake: Low Carb and Banting Friendly!
For us, the festive season has everything to do with summertime & the best produce the season has to offer. That’s why we’ve flavoured up our Vanilla Cupcake premix with our summer favourite: strawberries!
For the cake:
Banting Blvd Vanilla Cupcake premix
5 large strawberries, sliced into quarters
¼ full cream yoghurt or coconut milk
For the cream cheese icing:
250g cream cheese
60ml xylitol / erythritol
10ml vanilla extract
Juice of 1 x lemon
Method:
Make the Vanilla Cupcake premix as instructed on the pack. Before baking, add the strawberries and yoghurt / coconut milk. Mix until combined.
While the Strawberry Cake is baking, make the icing: mix the sweetener, vanilla and lemon juice & zest together. In a separate bowl, beat the cream cheese until softened. Add the lemon mixture to the cream cheese and beat until mixed through. Top with extra strawberries and mint to decorate. Enjoy!
