Serve 12-16 cookies
What You'll Need:
100g Heba Pap
2 tbs coconut flour
100g butter, softened
1 large egg, room temperature
Pinch of salt
4-6 tbs erythritol/xylitol
2 tsp cinnamon
1 tsp ginger
½ tsp mixed spice ( or ¼ tsp cloves & ¼ tsp nutmeg)
Xylitol icing sugar
Preheat oven to 180’C and line a baking tray with parchment paper.
Combine ingredients in a bowl and mix until well combined.
Roll out the dough between two sheets of parchment paper and cut out with your favourite cookie cutters.
Transfer cookies to the prepared baking tray and bake in the oven for about 10-15 minutes (until golden brown).
Remove the baking dish and let it cool for about 30 minutes.
Dust with xylitol icing sugar or drizzle with coconut butter and enjoy.
