Banting Blvd Chocolate Peanut Butter Swirl Cake
INGREDIENTS
Chocolate Cake:
Peanut Butter Swirl:
- 2 Tbsps Peanut butter
- 4 Tbsps milk
- Pinch of salt
- 1 tsp xylitol
Chocolate Peanut Butter Frosting:
- 120g butter, softened
- 2 Tbsps Peanut Butter
- ⅓ cup cacao powder
- 4-6 Tbsps xylitol
- ¼ cup cream
- Pinch of salt
- 1 tsp vanilla extract
METHOD
Make the Peanut Butter Swirl: Mix all the ingredients with a fork until well combined. Heat up in the microwave for 10-15 seconds. Take out and mix until a sauce consistency forms. Set aside.
Make the Chocolate Cake:
1. Follow instructions as outlined on the back of the Banting Blvd Chocolate Cake premix package. Before baking, follow the below steps.
2. Once you have the batter spread out evenly in the baking tray, make 10-12 openings in the batter using a spoon and place a little bit of the Peanut Butter Swirl inside before closing it again with cake batter (almost like planting seeds!).
3. Use a toothpick and drag the batter through the cake mixture in a swirl motion before transferring to the oven to bake.
Make the Chocolate Peanut Butter Frosting: Use an electric mixer to combine the butter, peanut butter and xylitol. Slowly start adding the cream and then add the cacao powder, salt and vanilla extract. Mix until smooth.
Once the cake has cooled down, top with the Chocolate Peanut Butter Frosting, slice and serve!
